sugar-free vegan cake because it's moist and chocolatey, fluffy and decadent,
not too sweet, and easy to make. It can be made gluten-free or pulse-cooked for
a healthier option.
This paleo
chocolate vegan cake is so fluffy and delicious; you will not believe that it
is sugar-free and made from just 5 ingredients. It requires no eggs or dairy
but is made from almond flour and coconut flour. However, it doesn't have any
added sugars at all. The coconut flour gives the cake a slightly sweet taste,
but the chocolate flavor comes from the dates.
The cake is filled
with chocolatey goodness: cocoa powder and unsweetened cocoa powder give it a
rich texture. At the same time, pure maple syrup adds sweetness and depth of
flavor, which complements the salty flavors of the chia seeds (which won't be
too noticeable).
The cake has a few
steps to make it, so it takes a little time, but all individual steps are very
easy and quick. I love making this when I want a special treat that I can feel
good about. It's not too sweet, so it won't give you a sweet tooth.
Almond flour and
coconut flour are mixed with cocoa powder, pure maple syrup (or honey), and
chia seeds. This mixture is then combined with plant-based milk like almond or
cashew milk. All of the ingredients come together to create a cake that is both
filling and tasty.
Step 1: Combine
almond or cashew milk and plant-based milk. If you're vegan, use plant-based
milk and if you're gluten-free, use almond milk (or water).
Step 2: Add cocoa
powder to the mixture. To get a different flavor, you can add unsweetened cocoa
powder or regular cocoa powder. I added both to mine!
Step 3: Add chia seeds, so the cake is not too
dry. Chia seeds are good for you because they have a lot of omega-3 fatty
acids, so don't skip them! They have a salty taste which is excellent in
recipes like this one because it complements the sweetness from other
ingredients like maple syrup or honey.
Cocoa powder and
unsweetened cocoa powder give this chocolate vegan cake a rich texture.
However, if you want a lighter, more delicate cake, use regular or
Dutch-processed cocoa powder.
There are three
steps to making the cake: mix together the dry ingredients (almond flour or
coconut flour with cocoa powder), mix up plant-based milk with other
ingredients, and combine everything together into one big batter. Lastly fold
in chia seeds so that the mixture doesn't crumble apart when you stir it.
The last few
minutes of cooking time are crucial as they will determine whether your cake is
fluffy or not.
